The FATE living lab takes place in Østfold county in Norway. The living lab is embedded in political decisions related to organic food and healthy high school canteens. The aim of the living lab is to co-create knowledge and co-design and test ideas for interventions to generate change in food behaviour and sustainability mindsets among students, as well as changes in canteens and in the food value chain. The living lab adopts a holistic approach considering aspects of sustainable agriculture, food consumption, public health, education and local business development. These aspects are closely interlinked and reflected in which actors are invited and how the participatory and co-creative processes are facilitated. Partners in the living lab is Nofima, Østfold county council and Guldkorn. Participants in workshops are high schools and other public bodies, farmers and different NGOs, start-up entities and commercial kitchen advisors. The living lab is part of a larger project with the aim of understanding the mindset of young people and how they can engage in sustainable food.
